One couple, one menu, two individuals
We manage 21 allergenic or medically required dietary avoidance's across 11 commonly occurring diets. Identifying individual needs in advance allows us to plan, procure and prepare high quality substitutions. So here is an example of a couple that ordered seafood pasta where the husband has a gluten-free requirement and the wife is a vegetarian.

We created two versions of large Portobello mushrooms hiding beneath a broad selection of Mediterranean roast vegetables with parsley and freshly picked basil. The gentleman's version included anchovies. Served with freshly baked Ciabatta and 'A Mano' Italian virgin olive oil.
Sicilian Summer - Italian Seafood Pasta for the Gentleman (spot the pasta)
Capitalising upon the outstanding fresh seafood treasures available on these beautiful islands we created a pallet of hand-dived scallops, langoustine, monkfish, salmon and very tender squid served with a uniquely made marinara sauce with gluten-free pasta on a bed of fresh spinach. Freshly picked Viola edible flowers.
Sicilian Summer - Italian Vegetarian Pasta for the Lady
Pasta shells stuffed with freshly made pink fennel and cashew nut cream with garlic and hand-seared yellow pepper served on a uniquely made pizzaiola sauce (cooked for three hours) dressed with roasted butternut squash, wild mushrooms, thyme florets, parsley on a bed of spinach. Freshly picked Viola edible flowers.
Complemented with a side dish of aubergine and freshly picked Shiso.
And finally without dietary variations Panna cotta for both the lady and gentleman to enjoy.

Orkney Firms Step in to Prevent Visitors' Disappointment
A charming couple had flown half-way around the world to Orkney, only to find their holiday plans blighted by a technology mishap that left them without the facility of their planned car hire.
Our thanks to Stan Groundwater of Pure Orkney for giving up his planned day off at extremely short notice and for instantly creating a memorable tour for them.

Missing Bell award-winning gourmet porridge, with cinnamon imported from Indonesia, Guatemalan honey, and freshly made sugar-free apricot and shiso compote.

Tomatoes, cucumber, salad leaves, fresh eggs, avocado, Parma ham and broccoli. Missing Bell dressing of virgin oil, coconut milk, black pepper and fresh French tarragon.
Fourth Course: Balanced Nutrition - Protein
Orkney beef minute steak, finely chopped garlic, shallots, black pepper Provençal herbs, freshly picked Marseille basil and burgundy to create Provençal beef on a bed of spinach leaves. Oven roasted tomatoes in virgin oil. Mushrooms in marjoram and burgundy. Accompanied by French wholegrain mustard with cranberry and pickled walnuts. Garnished with fresh asparagus.

To celebrate their friendship, a birthday and love of exquisite cuisine, this foursome group chose the foodie adventure and scintillating flavour trail of a special Izakaya menu with ten servings of meat and seafood.

Traditional steamed duck and freshly made Japanese egg roll.
Freshly hand-made maki-sushi, wrapped in nori and ura-maki sushi rolled in roasted sesame seeds. Featuring Orkney organic salmon with freshly picked shiso and hand dived scallops.
Served with real wasabi, shouyu (soy sauce) and gari (sweet pickled root ginger).

Most people outside of Japan have never experienced the unique and exquisite taste of the difficult to grow Wasabi rhizome. Here is fresh wasabi procured and delivered for the occasion from Shizuoka (South West of Tokyo). Depicted also is the wooden block covered in shark skin used to rub wasabi.

Vegan, Vegetarian and Pescatarian Travel Pack Gourmet Breakfasts
Some travellers leave the beautiful Orkney Islands on an early morning ferry. Eight years ago we recognised some people's natural reluctance to eat breakfast just prior to a sea crossing four years ago. We also recognised that bed and breakfast guests were entitled to a breakfast regardless of having to leave early in the morning. Accordingly, we created the facility for takeaway breakfasts, giving travellers the opportunity to find a scenic spot at which to stop and enjoy a gourmet picnic. Here are examples of the two breakfasts that we created this morning.
Aubergine roasted in virgin oil and oregano, mushrooms in marjoram, roasted tomato, brown rice on a bed of salad rocket cooked with red onions, chickpea, pine nuts, sliced almonds, parsley, black pepper and pumpkin seeds.
French brie, boiled eggs, roasted tomato with brown rice on a bed of salad rocket cooked with red onions, chickpea, pine nuts, sliced almonds, parsley, black pepper and pumpkin seeds.
Orkney organic hot smoked salmon, sauteed in Sancerre and fresh French tarragon on a bed of fresh spinach with mushrooms cooked in Chardonnay and oregano, tomatoes in virgin oil and oregano, complete with boiled eggs.
Vegan and vegetarian takeaways included cranberry and cashew nut bread, appropriate yoghurts, banana, appropriate fruit and nut nutrition bars and packs of orange juice.
Pentland ferries operate an economic and convenient, short crossing time (approximately one hour) with a smooth in the water catamaran vessel between the quaint village of St Margaret's Hope and Gills Bay.
